Staying true to the Sip happens! philosophy, we’re once again embracing contrast with purpose. One wine showcases the polished power and modern expression of Napa Valley, while the other captures the structured elegance and depth of Ribera del Duero.

In this edition, we explore Orin Swift “Palermo” 2022 (USA) and AALTO 2023 (Spain).

Two wines, two styles - one rich and opulent, the other focused and refined.

Palermo 2022 - Orin Swift

A bold expression of Napa Valley craftsmanship, combining intensity with elegance and a polished, modern character that makes it both captivating and highly drinkable.

Origin & Story

“Palermo” by Orin Swift reflects the visionary approach of winemaker Dave Phinney, known for pushing boundaries while maintaining a strong sense of place. Sourced from carefully selected vineyards across Napa Valley, this Cabernet Sauvignon captures both the region’s richness and a distinctive stylistic edge.

The name “Palermo” evokes a sense of heritage and storytelling, aligning with Orin Swift’s philosophy of creating wines that are as expressive in identity as they are in taste.

In the Glass

At first glance, Palermo shows a deep, rich ruby colour with impressive density, hinting at its concentration and structure.

On the nose and palate:

  • Remarkable aromatic complexity

  • Layers of dark fruit with subtle oak influence

  • A beautifully balanced structure

  • An exceptionally long, lingering finish

Aging: Aged in French oak barrels

AALTO 2023 - Bodegas y Viñedos

A powerful expression of Ribera del Duero, where intensity meets elegance, delivering a wine that feels both bold and refined.

Origin & Story

Aalto is crafted in Spain’s renowned Ribera del Duero region, celebrated for producing structured, age-worthy wines. Made primarily from Tempranillo (locally known as Tinto Fino), it represents a modern interpretation of this classic grape, focusing on purity, balance, and depth.

Founded with the vision of combining tradition and precision winemaking, Aalto reflects the character of old vines and the extreme continental climate-hot days and cool nights-resulting in wines with remarkable concentration and freshness.

In the Glass

At first glance, Aalto 2023 displays an intense, deep cherry-red colour with vibrant reflections, indicating its richness and youthful energy.

On the nose and palate:

  • Ripe dark fruit with generous intensity

  • Elegant vanilla notes from oak ageing

  • Subtle spice and lightly toasted nuances

Our Blind Tasting

A fruit-driven, expressive wine where rich fruit is beautifully complemented by smooth vanilla notes. Well-structured yet approachable, with a long, satisfying finish-enjoyable both on its own and with food.

  • Grapes: 100% Tempranillo (Tinto Fino)

  • Region: Ribera del Duero, Spain

  • Vinification: Selective hand harvest, fermentation in stainless steel with controlled temperature to preserve fruit intensity

  • Aging: Approx. 12–16 months in French and American oak barrels

  • Alcohol: ~14.5% vol

  • Price: ~CHF 40
