Sip happens! – Issue No. 11

This month, we took a slightly different approach. Instead of tasting at home, we planned a Thursday Wine Night at SUPPA – Pane e Amore in Constance, one of our favourite Italian restaurants.

An evening built around great food, great company, and two exceptional wines. We started with a classic Vitello Tonnato as our opening course, paired with the elegant Contratto Pas Dosé Millesimato Alta Langa DOCG. Its freshness and precision complemented the dish beautifully.

For the main course, we moved to the iconic Vietti Castiglione Barolo, a wine that perfectly reflects the elegance and character of Piedmont. Fabio enjoyed filled ravioli with black truffle, while Dani opted for a traditional Pasta alla Carbonara. The Barolo proved to be a fantastic companion to both dishes, revealing more complexity and charm with every sip.

Two wines, two courses, and a reminder that the best bottles are often the ones shared around a great table.

Contratto Pas Dose Millesimato 2021

Founded in 1867, Contratto is one of Italy’s historic pioneers of Metodo Classico sparkling wine production. Located in Canelli, Piedmont, the winery has built its reputation on crafting refined sparkling wines that rival some of the finest examples in the world.

The Millesimato Pas Dosé 2021 comes from the prestigious Alta Langa DOCG, an area known for its high-altitude vineyards and exceptional conditions for sparkling wine. Made from 80% Pinot Nero and 20% Chardonnay, this vintage expression is aged extensively on its lees and bottled with zero dosage, allowing the purity of the fruit and terroir to shine through.

In the Glass:

The Contratto Pas Dosé Millesimato 2021 displays a bright straw-yellow colour with an elegant, persistent mousse.

On the nose and palate, you'll find:

  • White peach and citrus zest

  • Delicate orange blossom notes

  • Brioche and freshly baked bread

  • Aromatic herbs and subtle mineral nuances

Our Blind Tasting:

A precise and beautifully balanced sparkling wine with remarkable freshness and tension. The fine mousse and crisp acidity immediately stood out, while the citrus and brioche notes gained complexity as the wine opened up. Dry, elegant, and incredibly food-friendly, it impressed with both its purity and its persistence on the finish. 🍾

Vietti Barolo Castiglione 2020

The Vietti Barolo Castiglione 2020 is crafted from Nebbiolo grapes sourced from several prestigious vineyard sites across the Barolo DOCG region in Piedmont, Italy. By blending fruit from different villages and terroirs, Vietti creates a wine that offers a complete expression of Barolo's character while remaining remarkably balanced and harmonious.

Founded in the late 19th century, Vietti has earned a reputation as one of the region’s most respected producers, combining tradition, precision, and a deep respect for the land. The Castiglione bottling is often considered the perfect introduction to the house style: refined, authentic, and unmistakably Barolo.

In the Glass:
The Vietti Barolo Castiglione 2020 reveals a brilliant garnet-red colour with characteristic ruby reflections.

On the nose and palate, you’ll find:

  • Ripe red cherries and wild berries

  • Delicate floral notes of dried rose petals

  • Hints of sweet spice, tobacco, and earthy nuances

  • Fine tannins balanced by vibrant acidity

Our Blind Tasting:
The 2020 Barolo vintage is considered very good to excellent, producing wines with freshness, elegance, and strong aging potential. We believe this bottle will benefit greatly from a few more years in the cellar. 🍷

Grapes: Nebbiolo 100%
Region: Barolo DOCG, Piedmont
Vinification: Hand-harvested Nebbiolo grapes. Stainless steel tanks for approximately 3-4 weeks with skin contact.
Aging: Approximately 30 months in large oak casks and a smaller proportion in barriques.
Alcohol: 14.5%
