Sip happens! – Issue No. 9

This month, we’re shifting gears - from bubbles to depth. Two reds, two regions, two completely different personalities, but one shared goal: wines that leave a lasting impression.

Staying true to the Sip happens! philosophy, we’ve once again paired contrast with intention. One bottle offers outstanding value for its price, the other brings a touch more structure and pedigree, both delivering far more character than you’d expect at first glance.

In this issue, we’re exploring Taoba Saperavi 2022 from Ilia Estate (Georgia) and Château d’Aiguilhe Castillon – Côtes de Bordeaux 2022 (France).

Two wines, two worlds - one bold and expressive, the other composed and classic.

For those who want to dive deeper into the tasting (and enjoy a few honest reactions along the way), the full session is available on YouTube. And yes Swiss German included. Subtitles recommended, but not required 😉

If you’re in the mood for something with a bit more depth this month, this edition has you covered.

Taoba Saperavi 2022 - Ilia Estate Georgia

It’s a reflection of Georgia’s deep rooted winemaking culture, combined with a modern, accessible style that makes it both intriguing and enjoyable.

Origin & Story: Georgia is widely considered the cradle of wine, with over 8,000 years of winemaking tradition. Saperavi, meaning “dye” or “color” in Georgian, is one of the country’s most iconic grape varieties. Unlike most red grapes, Saperavi is teinturier - its flesh is red as well as its skin - resulting in wines with extraordinary depth of colour and intensity.

The name “Taoba” translates to “generation”, symbolising continuity and heritage. This wine reflects exactly that: a bridge between ancient techniques and modern craftsmanship.

In the Glass: From the first glance, the Taoba Saperavi 2023 impresses with a deep, almost inky ruby colour, a clear indication of its power.

On the nose and palate, you’ll find:

  • Dark berries and black cherries

  • Warm spice notes

  • A subtle but distinctive hint of liquorice

Our Blind Tasting: A spicy wine with liquorice nuances, which truly opened up during the meal. With food, it became rounder, more expressive, and increasingly enjoyable.

  • Grapes: 100% Saperavi

  • Region: Kakheti, Georgia

  • Vinification: Fermentation in qvevri (amphora) and stainless steel

  • Aging: Aged in French/American oak barrels and partly in qvevri

  • Alcohol: ~13%

  • Price: ~17.- CHF

Château d’Aiguilhe Castillon – Côtes de Bordeaux 2022 France

Château d’Aiguilhe is one of the standout estates of Castillon, Côtes de Bordeaux, owned by Count Stephan von Neipperg, a key figure behind several renowned Right Bank wines. Situated on elevated limestone and clay soils - very similar to neighbouring Saint-Émilion - the estate consistently delivers wines with depth, structure, and a strong sense of terroir, yet at a far more accessible price point.

In the Glass: The 2022 vintage, dominated by Merlot with a touch of Cabernet Franc, presents a deep ruby colour in the glass. Aromatically, it combines ripe dark fruit with elegant vanilla notes from oak ageing and subtle hints of dried fruits, adding warmth and complexity. On the palate, the wine shows clear depth, well-defined structure, and polished tannins, leading to a long and balanced finish.

Our blind tasting verdict: In our tasting, this wine impressed with its clarity and depth, supported by a refined vanilla driven complexity and nuances of dried fruit. It strikes a great balance between seriousness and approachability - making it equally enjoyable for seasoned wine lovers and those just exploring Bordeaux.

A well-structured, complex yet accessible Bordeaux and a perfect entry point into the region for anyone looking for strong quality at a fair price.
